I don’t know what cowboy inspired Angela to concoct these cookies, but—take it from me—after making a batch of these; you will want to join that rodeo! These are the true “everything” cookies: they have nuts, chocolate chips, oatmeal, butter, and a ton of flavor. The batch I made, were so damned good I couldn’t quit eating them. When Angie promises these cookies will unleash a sheer flavor “fetish,” she means it!

Ingredients:
– 1/4 lb. Butter
– 1/2 cup Granulated Sugar
– 1 cup of crushed Pecans (or Walnuts)
– 1/2 cup Brown Sugar
– 1 Egg
– 1 teaspoon Genuine Vanilla Extract
– 1 tablespoon Evaporated Milk
– 1 1/4 cups of Flour
– 1/2 teaspoon Baking Soda
– 1/2 teaspoon Baking Powder
– 1/2 teaspoon Salt
– 1 cup of Oats
– 1 cup of Miniature Chocolate Chips
Directions:
Preheat oven to 350 degrees Fahrenheit.
Cream together the butter and white sugar with an electric beater.
Sift or mix together the flour, baking soda, salt, and baking powder, and add the mixed dry ingredients to the butter and sugar. Add the evaporated milk, vanilla extract, egg, and crushed nuts, and continue to blend with an electric mixer.
[NOTE FROM ANGIE: “To crush the pecans and extract the oil place in a plastic bag, force the air out and grind on them gently. When I have my trusty mallet: I use that. When I don’t: the bottom of a Pyrex measuring bowl is heavy enough to crush and release the oils, and that is the trick to the flavor!”]
At this point convert from the electric mixer to a spoon, and add the oats and the mini chocolate chips, and mix them together in the batter.
My favorite baking tool is cutting a piece of parchment paper to line the cookie sheet pan with before using it. It makes for foolproof bottoms to cookies and scones.
[TIP FROM ANGIE: “With two spoons make small mounds, a teaspoon is best but a tablespoon will do—for the bears amongst us that need larger cookies! With a fork dipped in cold water flatten the mounds out and make sure all chips of nuts and chocolate are attached to the very heavy dough.”]
Just like Angie says, using two teaspoons, create a sphere of cookie dough about an inch and a half round, place them on a cookie sheet pan, and flatten them out slightly. Make sure you leave two inches around every mound, as these are going to rise and spread out as they bake, and—you don’t want them stuck to each other.
Bake the cookies approximately 15 minutes, as everyone’s oven temperature varies a bit. As soon as they are golden brown, remove them from the oven, and let them cool off before beginning your next batch. I found that making them in batches of no more than six at a time yielded the best results for individual cookies that weren’t glued together on the pan.
