NOTE: I love limes so much that I can peel a lime, just like an orange, dip the lime segments into sugar, and eat them. I have also been making Key Lime Pies since I was a teenager, so I have sampled a lot of recipes. Like all of the recipes in this blog, this is one I developed, tweaked, and twisted from years of cooking experience. If you like Key Lime Pie, you are totally going to dig this one. Also, it is super easy to make. While eating it, my may feel a compelling urge to put on a Jimmy Buffet or a Kenny Chesney CD, and imagine you are in the Caribbean! Key Lime Pie Filling
Ingredients:
–5 Egg Yolks
–1 (14 ounce) can of Sweetened Condensed Milk
–1/2 cup of freshly squeezed Lime Juice
–1 tablespoon of Fresh Lime Zest
–2 drops of Green Food Coloring
–1 (9 inch) Graham Cracker Pie Crust
Topping: Whipped Cream (optional)
Garnish: Lime slices dipped in sugar (optional)
Directions:
Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius).
Grate the peels of your limes to produce 1 tablespoon of lime zest, then squeeze the lime juice out of cut lime halves and set aside.
Beat the egg yolks until frothy.
Mix the egg yolks with the sweetened condensed milk, lime juice and lime zest.
Add two drops of green food coloring if you want a lime green color (optional).
Pour the pie filling into unbaked graham cracker pie crust.
Bake the pie in the preheated oven for 15 minutes. Remove from the oven, and allow it to cool in the refrigerator approximately one hour.
You can top with whipped cream topping and garnish with lime slices if desired.
Pie Crust
NOTE: If you want to take the easy route: in your local grocery store you will find
several pre-made graham cracker pie crusts, that are ready-to-fill. It makes it quick
and easy. Remove the plastic cover from the ready-made crust, fill with the Key Lime
Pie Filling, and follow the above the directions. If you want to make your own graham
cracker crust, you can easily make it with graham cracker crumbs, sugar, and one stick of
softened butter. See the directions below.

–1/3 cup Granulated Sugar
–8 tablespoons Butter (one stick)
Directions:
Place the Graham Crackers in a bowl and finely break them up. Or, place the Graham Crackers in a plastic food storage bag and break them up using your hands or the bottom of a wine bottle, or a wooden cooking spoon.
Measure out the cup and a half of Graham Cracker crumbs, and mix them with the sugar
and butter.
Press the mixture into a pie pan of metal or an oven-safe glass pie pan.
Place the pie crust in the refrigerator for half an hour to solidify. Take it out of the refrigerator, fill and bake it as per above instructions.
