NOTE: You will find these easy-to-make noodles to be absolutely addicting. It can be served as a main course, as an appetizer, or a side course. If you like spicy food, you will love this. These noodles will go perfectly along side any of your favorite Chinese stir fried recipes. With regard to the Peanut Butter, do not use commercial processed spreads. Instead get the natural Organic Peanut Butter that separates in the jar. Before using it, stir up in the jar.
Chinese Cold Sesame Noodles
Ingredients:
-3 tablespoons Organic Peanut Butter
-2 tablespoons Sesame Oil
-2 tablespoons Soy Sauce
-2 tablespoons Sweet Asian Rice Cooking Wine
-3 tablespoons Vegetable Broth (use Vegetable Bouillon cubes to make the broth)
-1 tablespoon Hoisin Sauce
-2-3 tablespoons Chinese Hot Chili Oil
-1 tablespoon Whole Sesame Seeds
-½ pound Lo Mein Noodles (Spaghetti or Linguini Noodles will work as well)
-2-3 Sliced Green Onions
Directions:
Combine the first eight ingredients in a saucepan. Heat the sauce at a low to medium stove setting, stirring constantly for 3-5 minutes, until the mixture is of a uniform consistency. Cool slightly for a minute or two, pour over and toss with ½ pound of cooked Lo Mein Noodles that have been rinsed in cold water and drained. Refrigerate for one to two hours before serving. Garnish with Sliced Green Onions. Serve cold.
